As always, you don’t need a ton of different ingredients to make this recipe. Keeping it simple and easy is my motto.

So this is all you need:

  • Potatoes
  • Vegan butter
  • Olive oil
  • Oat milk
  • Minced garlic

How to make garlic mashed potatoes

First peel and wash your potatoes. Cover them in a large pot with water and bring to a boil. Cook them for at least 20 minutes, then check if they are done. If not, extend cooking time.

When they are soft, rinse and add the potatoes back to the same pot. Use a potato masher to pre-mash. Add garlic, olive oil, oat milk, and vegan butter. Season with salt and pepper, plus the optional garlic powder. Mash finely with a potato masher, or alternatively use a hand blender.

Serve on plates or bowls. This is a great side dish, main, and perfect for meal prep. It reheats beautifully for lunch or dinner. I love how amazingly good these are some caramelized or French fried onions on top.

Variations and tips

Olive oil garlic mashed potatoes: skip the vegan butter, oat milk and simply use just olive oil.

Roasted garlic mashed potatoes: simply put the garlic on a baking sheet, drizzle with olive oil and roast at 425°F for 20 minutes.

If you’re into a more rustic dish which is even more hearty don’t peel the potatoes. Finally use red potatoes for more variation.

  • 4 Tbs vegan butter
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup oat milk
  • salt, pepper to taste
Optional:
  • 2 Tbs garlic powder

Instructions
