Healthy Strawberry Recipes

As we move fully into strawberry season, I wanted to take some time to collect some of my favourite healthy strawberry recipes from here at Occasionally Eggs and some of my favourite blogs. Although I love rhubarb in the spring, strawberries are the first hint of summer with their true sweetness.

They’re also a very easy plant to grow if you have a small space like a balcony or can hang a pot in a sunny window. We planted several between other plants this year, and they’re in with the lettuces, brassicas, and herbs. And if you’re not growing your own, look for the smallest, most jewel-toned berries you can find – they’ll be the sweetest. 

Strawberries are a nice addition to anything to do with chocolate and lemon, but also pair nicely with some slightly more out-of-the-way spices like pink peppercorns and chili peppers. You’ll see all of that here – as well as ice cream, drinks, and a savoury recipe. I most love strawberries either alone or dipped in dark chocolate during their high season, but will add them to anything and everything while they’re here.

Enjoy these healthy strawberry recipes, and take advantage of them while they last! Out of season strawberries are sad small nuggets, not real berries at all.

1. Lemon Vanilla French Toast with StrawberriesOccasionally Eggs
Made with a vegan challah, this easy dairy free french toast is the perfect pairing to strawberries. Try this for a weekend breakfast (any bread works). Get the recipe here.

2. Strawberry Chocolate Chip Nice Cream – Vanilla and Bean
Frozen bananas, strawberries, and a little creamy coconut milk are blended up into a healthy ice cream here, studded with dark chocolate. It’s a great way to satisfy a craving without breaking out a pint of high-sugar ice cream. Get the recipe here.

3. Springtime Strawberry Sparklers – Occasionally Eggs
A frozen strawberry, lime, and mint base is topped with sparkling water for these simple, refreshing drinks. Have them as is or add a little tequila to make a healthier strawberry margarita. Get the recipe here.

4. Spelt Shortcakes with Kombucha Macerated Strawberries – The Simple Green
Vegan spelt strawberry shortcakes, fancied up even more with kombucha strawberries. Macerating the berries helps to bring out their natural sweetness and a touch of acidity from the kombucha. Get the recipe here.

5. Double Strawberry Rye Brownies – Occasionally Eggs
With strawberries both blended into these healthy brownies and roasted as a topping, the chocolate doesn’t overpower the flavour of the berries, making these taste like a chocolate covered strawberry in brownie form. Get the recipe here.

6. Strawberry Baked Oatmeal Cups – Hello Veggie
Healthy oat based cups with strawberries are a nice healthy breakfast or snack option and sturdy enough to take on the go. Get the recipe here.

7. Strawberry Rhubarb Cobbler – Occasionally Eggs
A spelt and coconut oil scone topped cobbler, with very minimal sweetener, and a pretty ruby red colour from the fruit. Topped with a little coconut milk ice cream, it’s the best at this time of year. Get the recipe here.

8. Strawberry Rosewater Labneh Bowl – Cook Republic
The only recipe on this list that uses dairy, this can be easily switched out for a coconut milk based yogurt for a vegan option. I can see this being really lovely with a simple cookie for a sweet platter. Get the recipe here.

9. Chocolate Semifreddo with Chili, Strawberry, Olive Oil & Rose – Gather and Feast
A bit over the top now! With a cashew cream and cacao butter base, it’s a rich vegan ice cream served with strawberries and rose petals. Get the recipe here.

10. Strawberry Elderflower Scone Cake – Occasionally Eggs
The elderflower blossoms are just on the edge of blooming here, and I can’t wait to make this easy giant vegan scone cake again. With coconut whipped cream, berries, and floral elderflower, it’s a spring dream. Get the recipe here.

11. Salty Strawberry Sauce with Pink Peppercorns – With Food and Love
I’m loving the flavour profile here – a little salty, sweet, and spicy, all in one vibrant pink sauce. On bread? With a nut cheese? By the spoonful? All of the above. Get the recipe here.

12. Strawberry Jam Bars – Occasionally Eggs
Gluten free oat based bars, with a strawberry filling, and crumble topping. These have been a spring favourite of mine for years and are still going strong. Get the recipe here.

Perhaps I should have looked a little harder for savoury strawberry recipes for this collection, but I have a sweet tooth and wanted to look at desserts.
